Gluten-Free Cupcakes

My husband, Bob, recently went gluten free and

was craving some chocolate cupcakes. So I created

a recipe for gluten-free chocolate raspberry cupcakes

that are moist and flavorful starting with my

Moist Chocolate Cake recipe. They don’t taste gluten

free at all! He replaced the flour with Bob’s Red

Mill Gluten Free 1 to 1 Baking Flour and a rounded

tablespoon of xanthan gum. Just prior to baking,

he folded in 1/2 c of frozen raspberries. Yum!
